Ingredients

  • 2 1/4 cup almond flour
  • 1 tsp salt
  • 4 each lemon
  • 4 Tbsp honey
  • 2 tsp pure vanilla extract
  • 5 Tbsp coconut oil
  • 1/2 cup shredded unsweetened coconut

Instructions

  • In a large stainless steel bowl, combine almond flour and salt. Juice lemons and zest one.
    In a separate large stainless steel bowl, combine honey, lemon juice, lemon zest, and vanilla extract.
  • Using an electric mixer, slowly add the wet ingredients, excluding coconut oil, to the dry ingredients until fully incorporated. Slowly add coconut oil to mixture.
    Using a 1oz ice cream scoop, portion out mixture. Roll on coconut flakes. Refrigerate until ready to eat.
