Moroccan Spiced Swiss Chard

Ingredients

  • 1.5 lbs Swiss Chard fresh
  • 4 Tbsp canola oil
  • 1 medium sized yellow onion chopped
  • 1 Tbsp fresh garlic chopped
  • 2 Tbsp ground paprika
  • 2 tsp ground coriander
  • 8 oz canned garbanzo beans drained and rinsed
  • 1/2 cup fresh cilantro
  • 1/2 tsp sea salt
  • 3 Tbsp fresh lemon juice

Instructions

  • Rinse the chard well, drain and chop into 2" pieces.
  • Heat the oil in a wide saucepan. Add the onions and cook for about five minutes.
  • Add the garlic and the spices and cook for two minutes more.
  • Add the greens and partially cover the pan. Allow the chard to wilt down and cook until tender.
  • Add drained garbanzo beans and stir occasionally until warmed through.
  • Add the chopped cilantro, salt and cook for another minute. Finish with lemon juice.
