Ingredients

  • 1 ea butternut squash about 1.5 lbs
  • 1/4 cup 100% pure maple syrup
  • 2 Tbsp Dijon mustard
  • 1/2 Tbsp whole grain mustard
  • 1 sec/spray cooking spray
  • 1/8 tsp ground black pepper

Instructions

  • Preheat the oven to 350 degrees.
  • Peel or cut the skin off the butternut squash. Slice the the butternut squash into 1-1.5 inch slices. Set aside.
  • Mix the maple syrup, dijon mustard and whole grain mustard in a bowl. Toss the butternut squash slices with the maple mixture and coat both sides.
  • Spray a sheet pan with oil and place the squash slices evenly on the pan. Season with pepper. Roast in the oven for 20 minutes, flipping once during the cooking process.
