Ingredients
- 1 cup oatmeal
- 1 cup fat free vanilla Greek yogurt
- 2/3 cup unsweetened coconut milk
- 1/3 cup sweetened shredded coconut
- 3/4 tsp turmeric
- 3/4 tsp coconut extract
- 1 tsp chia seeds
- 2 ea Red Delicious apples
- 1/2 cup blueberries fresh

Instructions
- In a large bowl or jar with lid, combine the oats, yogurt, coconut milk, shredded coconut, turmeric, coconut extract and chia seeds. Mix well.
- Cover mixture and place in the refrigerator for a minimum of 8 hours or overnight.
- Portion chilled oatmeal into 6oz servings. For each serving, top with 1 tbsp fresh blueberries and 1/4 of a fresh, cored and sliced apple.
