Watermelon Feta & Avocado Salad

Ingredients

  • 2 cups watermelon fresh, cubed
  • 1/8 cup red onion sliced
  • 1/8 cup fresh mint chopped
  • 1 ea avocados fresh, diced
  • 1/4 cup fresh lemon juice
  • 1/2 tsp honey
  • 1/2 Tbsp extra virgin olive oil
  • 1/8 tsp kosher salt
  • 1/8 tsp ground black pepper
  • 1/4 cup crumbled feta cheese

Instructions

  •  In a bowl combine the watermelon, red onion,mint and avocado. Stir gently to combine.
  • In a separate bowl, mix the lemon juice and honey together.
  • Then while constantly whisking, drizzle in the olive oil, a little at a time, until it's all combined.
  • Add the dressing to the salad and toss gently tocombine.
  • Top with the crumbled feta cheese.
