Instructions
Prepare Base - In a food processor, add the larger amount of oats, almonds, honey, coconut oil, salt, cinnamon, bananas, vanilla extract and chia seeds. Process until fully combined and paste-like. Pour the mixture onto a parchment lined pan and flatten to a 1/2 inch thickness. Cook in a 350° oven for 10 minutes. Prepare the topping while the base is cooking.
Prepare Topping - In a mixing bowl combine smaller amount of oats, almonds, pumpkin seeds, cranberries, coconut and sugar.
Remove the base from the oven and evenly spread the topping on it before it cools. Use a spatula to push the topping into the base to make it stick better. Cut in to even pieces to create bars.
